川味粉蒸排骨的做法

粉蒸肉、粉蒸排骨就是非常好吃的不辣川菜,嫩滑厚腻的米粉配上香香的五花或者排骨,每次吃都让人觉得特别过瘾。

方法/步骤

    干荷叶用温水浸泡回软,如果使用新鲜荷叶则洗净即可。老姜切成姜末备用。

    大米和糯米放入干净炒锅,加入花椒和八角用小火加热并持续翻炒,直至米粒微焦,香气四溢,将炒好的米摊放在大盘中晾凉。剔除米中的花椒和八角(如果喜欢香料味重的也可以保留),将米放入食品加工机中打成碎末成米粉。

    排骨洗净,斩成寸段,加入姜末、料酒、老抽、白胡椒粉、白砂糖、郫县豆瓣和油翻拌均匀腌渍20分钟。

    蒸笼中铺上荷叶,腌渍好的排骨逐块裹上一层米粉后放入荷叶包好,盖好蒸笼盖。

    大火烧开蒸锅中的水,放入蒸笼,大火加盖蒸30分钟即可。上桌时可以连蒸笼一同上桌。
